Vegan Falafel Recipe

Hey guys,

I hope all is well with you wherever you are in the world. This week I wanted to share with you a vegan falafel recipe that I found. Falafel is awesome, but there seem to be only a few places here in Atlanta where I can find a good one. Both are Turkish places. They are similar to the ones I had in Berlin, but not quite the same. Oh well, I tried to recreate the recipe that I found but I used fresh parsley since I had that in the garden ready to harvest.

Everything was kind of easy to put together. I just needed a can of chickpeas, some flour, some parsley, cumin, and lemon. You would just need a food processor to mash up the beans.

All it took was then to fry everything. I haven’t fried something in a hot minute, but thankfully I had some olive oil left over. They cooked rather fast, but I managed to make some vegan tzatziki sauce with a recipe I found at the Neurotic Mommy.

I gathered my hummus and pita bread and veggies and added some pickles. I love pickles! Everything came together quite nicely. Here is the recipe for the falafel below:
