Simple, fresh salad that is easy to make and very refreshing, this spiralized greek salad is a great meal that is so satisfying.

I am totally in love with using this spiralizer, I have been trying to figure out something to do with it. I found some recipes that I went over here, but I found one I really wanted to try. Spiralized greek salad might be my new go-to recipe for a quick and healthy salad option.

The salad was super simple to make, and you can add what you want to it. I do not actually eat a ton of salads. (I know, I am a vegan!). This recipe should help me incorporate a few more vegetables in my diet, and it is raw food friendly.

Serves: 1 bowl
Easy to make greek salad (no olives because I think they’re yucky)
  • Feta cheese/ vegan
  • 1 tomato
  • 1/2 cucumber
  • 1/2 lemon
  • 1 tablespoon olive oil
  • pepper/salt to taste
  1. Spiralize the cucumber first, and lay on a paper towel to get rid of some of the excess juice.
  2. While that is happening, slice as many tomatoes as you want in your salad, and add your feta.
  3. To make the dressing combine lemon, olive oil pepper/salt.
  4. Toss the salad to coat.
