This week I was so out of it from a very long drive back to Georgia, and I just could not be bothered to meal prep in the usual way. I kept seeing these salad jars, and thought, I pretty much have all that stuff at home, and it’s easy, so it is perfect for someone like me.
I have gotten in the habit of making these tempeh sandwiches, that would be rather similar to a BLT, so I thought, I could easily make a salad that would be similar. I already had some vegan ranch dressing that I had made last week, as well as all the other ingredients, so it was easy to put everything together. I learned that if I wanted to can a salad, that I should definitely put the dressing at the bottom first, and the lettuce or any dry ingredients at the bottom. I will give this recipe below.
Vegan Ranch Dressing Recipe
- 1 Cup Vegan Mayonnaise
- 1 Garlic Clove
- 1/2 teaspoon of fresh ground black pepper
- 1 tablespoon each of fresh parsley, chives, and dill
- 1/2 unsweetened soy milk
- 1/2 apple cider vinegar
- 1/4 teaspoon of paprika
- 1 teaspoon of sea salt
- Mash the garlic glove and the sea salt together. Add the rest of the ingredients. Adjust as needed
I am black, and there is a stereotype that I love ranch dressing, but who doesn’t? My ranch is very similar tasting to the “real thing.” I personally believe that being vegan doesn’t mean that it does not need to taste like anything. Most of these recipes I see online, I often be adding way more seasonings to make it taste right, but light on the sodium of course.
Next, I just chopped up some tomatoes, avocados, and cucumbers and added the lettuce on the top. I am trying it out for lunch tomorrow. Next, I am going to do the taco salad, because I love me some Mexican food.
