Jackfruit has been on my radar for some time. It has been tough to find unless I visit this huge farmer’s market in the city or find an Asian speciality market. They normally have it in Whole Foods, so I decided to grab a package and make some easy taquitos. This fruit, when seasoned just right can taste just like pulled pork or chicken.
See the picture! Jackfruit looks just like chicken to me, or some sort of pork. Great to eat without any of the guilt of eating little animals. It is a win-win for me. In addition to the taquitos, I made some mango salsa.
The mango salsa with the flavor of the jackfruit went together nicely. I grabbed a cilantro lime flavored package from Whole paycheck. Below are the finished product. I took these to a potluck and almost everyone who tried them seemed to like them.
I hope you are able to find yourself some jackfruit. It is super versatile to use for recipes you might just want to use a shredded pork or chicken type of substance that really does fulfil those cravings. It totally does for me. I do not remember how I even found out about jackfruit, but I am super glad I found it, and happy to share with you! Jack Fruit TaquitosPrint Recipe
- 1 Package of jackfruit ( I purchased from Whole paycheck aka Whole Foods)
- 1 package of flour tortillas
- 1 package of vegan cheese
- 1/4 cup olive oil
- Mango salsa
- 3 mangos
- 1 red pepper
- 1/2 red onion
- salt to taste
Preheat oven to 350 degrees F.
Unpack the jackfruit.
You can brown the jackfruit if you want, but you really don't need to.
Brush the tortillas with olive oil.
Wrap a spoonful of the jackfruit in the tortilla and roll with the open flap facing down (so it doesn't open).
Sprinkle with vegan cheese
Baked in oven until brown. You can turn them in about 10 mins to bake on all sides.
Serve with mango salsa.
