Lately, I have been making a lot of recipes with jackfruit. I was able to find the canned version via Trader Joes and picked up several cans. To me, it has the texture of chicken. Recently, I found a jackfruit tuna recipe and had to try it. Jackfruit is not just a meat substitute it has a few other benefits:

- Maintains blood pressure
- Improves digestion
- Boosts energy

Jackfruit Tuna Recipe
I used to love my tuna sandwiches with loads of miracle whip and relish, which was how my mother made them, so I tweaked the recipe I found to suit my tastes. I would encourage you to do the same. If you like celery or onions in your tuna (yuck) go on ahead. I do have to admit, the jackfruit was a little off in texture, and I would not eat it on day 2. Next time, I would probably not even use the parsley, which came straight out of my garden. I love being able to get herbs from my balcony.
JackFruit Tuna SandwichesPrint Recipe
- 1 14oz can of jackfruit
- 1 tablespoon chopped parsley
- 1/4 cup dijon mustard
- 1tablespoon plant-based yogurt / vegan mayo
- 1/2 tsp paprika
- 1 tablespoon of relish
- salt and pepper to taste
1. Drain and rinse jackfruit. Place in a food processor to chop until it resembles tuna.
2. Add jackfruit and the rest of the ingredients to bowl.
3. Serve on your sandwiches
