Hope you are doing well. I am finally over my flu, and I am feeling much better. I still haven’t gone to the gym in a few weeks, which is the longest time in a year, but I think I will be at 100% by the end of the week. I am too short to gain too much weight. This week, I wanted to share my burrito bowl recipe that I made to meal prep for the work week.

Vegan Meal Prep: Burrito Bowl
This recipe came about when I realized I did not want to cook a bunch of food, but I wanted something healthy and filling that was not soup. It would be similar to my wraps, but without the tortilla. So, I made some salsa, seasoned some black beans, made some Mexican rice (out the pack!) and seasoned and cooked some corn. Just now, I am realizing that I probably should have had more greens, but it was a delicious burrito bowl.
I think leaving recipes to season black beans and corn may not be needed. Using traditional taco seasonings like salt, cumin, garlic, and other things suited this recipe just fine. Again, I purchased the rice from a box, which is a rare move for me, but I really was sick and I live alone with a traveling boyfriend. I can forgive myself this one time, but I can hear my mom in my head telling me that was the wrong move. With that said, I will give a recipe for salsa.
Simple Salsa RecipePrint Recipe
- 3 tomatoes
- 1/2 onion
- half bunch of cilantro
- half juice of lime
- Sea salt to taste
- 1 garlic clove minced
1. Chop tomatoes and onion.
2. Mince garlic and add sea salt to a bowl.
3. Add tomatoes and onions and cilantro to bowl
4. Juice half of lime & mix in more salt to taste.
Can let salsa sit for about an hour for flavors to mesh together.
