Last time, I made a salad in a jar. It was yummy. I love tacos, so I thought this week would be a great time to try this in a jar. It was really easy to make, and should last a few days. I am only packing for a few days because the boyfriend is in town and I usually never have time to eat my left overs. Boo.

For the salsa, here’s the recipe.

Easy Taco in a Jar

  • 1 glove garlic
  • 1 teaspoon of sea salt
  • 1/2 red onion
  • 2 tomatoes or 3 if you prefer
  • fresh cilantro
  • 1/2 lime or lemon
  1. Crush garlic and place in bowl.
  2. Add the rest of the ingredients and leave in the fridge for an hour for the flavors to mesh.

While I made the salsa, I started the rice in the rice cooker, and made the fillings on the stove. I used some fake beef crumbles and some black beans. I use taco seasonings like cumin/paprika/garlic salt along with some herbs.

After the salsa set long enough, I added it to the jars.

After adding the salsa, I added the filling and the lettuce and finally the rice. I read that you should put the lightest ingredients on top.


Very simple and very tasty.
