Vegan Winter Detox Soup

I have really been trying to incorporate more soups into my diet. It’s a great way to get all your veggies, and nutrients in one sitting. Soups also provide water and can help you lose some weight. I also love to detox everyone once in a while, and after finding this perfect recipe for Winter detox soup, I decided to go for it. I found this recipe at the healthy maven. I cut the entire thing in half however and added some more sea salt. It was easy and simple to make and just enough for me since I am not cooking for a big family.


I prepped all my veggies and threw them in the pot according to the directions. I left everything cook, and stirred them, and continued adding ingredients.

I hate celery, but in soups I can stand the taste just ok. It’s such a healthy vegetable so I do try to eat it. I can’t even juice it tastes so terrible.

Detoxing every so often is important, getting rid of all the toxins in our environment is vital these days. So much sugar, and salt in everything we eat.

The finished product was easy to simply pack up. I always tend to meal prep out of necessity at this point. It tasted rather yummy. I have never cooked with eggplant before, it was rather easy.
